Concerned no more! I have found what I was looking for. I like the consistency of the gravy produced with this flour; it definitely thickens. I have used this flour to coat my meat before sauteeing it. After removing the meat from the pan, I add my liquids (broth, wine,...) and seasonings; the end result is great. I didn't even have to add rice flour directly to the pan since I had lightly breaded my meat before adding it to the skillet. I will definitely make this a must-have staple in my pantry.
